Cool Off with Homemade Freeze Pops

I love the flavor and color combo of this strawberry-mango version, but you can combine just about any fruits you like in this simple recipe. These popsicle molds are my go-to because they come with a base to keep them upright in the freezer, but once frozen you can ditch the base and store them laying down to save space. If you don’t have popsicle molds you can also use medium dixi cups and good old-fashioned popsicle sticks.

Strawberry-Mango Yogurt Pops

Makes 6

1 ripe mango, peeled, pitted and chopped

1 cup plain yogurt, divided

2 tablespoons honey, divided

2 teaspoons lime juice, divided

6 popsicle molds or paper cups and popsicle sticks

1 cup fresh strawberries, hulled and halved

1. Add the mango, half the yogurt, one tablespoon honey, and one teaspoon lime juice to blender. Blend until smooth, scraping down sides of blender as necessary. 

2. Divide the mango puree evenly among 6 popsicle molds or paper cups. Tap molds gently on counter to release air bubbles. Rinse your blender.

3. Combine the strawberries, remaining yogurt, honey, and lime juice in blender and puree until smooth. Pour evenly on top of mango puree in popsicle molds, leaving a little space at the top, then insert popsicle sticks. 

4. Freeze for at least 4 hours, or according to popsicle mold directions. Release popsicle from mold and enjoy!

Note: If you have trouble releasing the popsicle from the mold, briefly run the outside under warm water.
